Pontefract Cakes are soft, chewy and full of rich licorice flavor. Monks in the 16th century created these disks as a medicine for coughs and stomach complaints. When sugar was added to them in 1760 they became immensely popular. A hard-to-find licorice treat.

Treacle, glucose syrup, sugar, starch, caramelized sugar syrup, wheat flour, gelatin, licorice extract (4.5%), salt, glazing agents: beeswax, carnauba wax.

I love the classic Pontefract Cakes. These are somewhat similar but gummier in texture (thanks to the gelatin, which I didn't realize they contained), and with a weaker flavor. Pontefract Cakes for beginners, maybe.
